When I think of my holiday menu planning there are certain recipes that I can’t live without.

You know, like my Grandma’s Quick Yeast Rolls, Honey Glazed Sweet Potato & Apple Casserole, or our family favorite Peaches & Cream Cheesecake Recipe. On that same list are these Creamy Holiday Potatoes.

They are perfectly rich and perfectly wonderful. I know the norm is mashed potatoes, but if you are willing to switch it up just once – you won’t regret it! I first discovered this gem of a recipe several years ago from my friend Jonna over at Just Get Off Your Butt and Bake. Not only is Jonna one of the sweetest people ‘I’ve never met,’ she has the most incredible recipes.

I’ve tried well over a dozen of them and have fallen in love with each one. When I stumbled across this recipe of hers a while back it became an instant hit. I’ve been making them for special occasions ever since.

Ingredients
  1. 5 large potatoes
  2. 1 c. whipping cream
  3. 1 c. New Traditional Swanson Cream Starter™
  4. 1 med. onion, thinly sliced
  5. 2 cups grated cheddar cheese
  6. 2 tsp. Parsley flakes
  7. Salt and Pepper
Instructions
  1. Cut potatoes into thin french fry strips, and lay the fries, in a 9×13″ glass pan. Pour the cream and Swanson Traditional Cream Starter over the top of the fries. Spread an even layer of sliced onions. Salt and pepper generously. Sprinkle grated cheddar cheese over the top followed by the parsley flakes on top of the cheese. Cover with foil, and poke a fork through the top of the foil, 2 or 3 times to allow a little steam to escape. Place your oven rack in the middle of the oven. Cook at 400 degrees for about 1 hour and 15 minutes, or until potatoes are tender. During the last 15 or 20 minutes of baking lower your rack one more step, making a brown and crispy crust on the bottom of your potatoes.
