Oh how I can hardly wait for summer! I’ve been longing for it ever since it ended last year. What am I most excited for? Besides the warm weather, camping, hiking, backpacking, picnics, long days of daylight, and gardening? Well the food of course! I’m itching to grill like nobody’s business! While, it’s been warm enough that we could have grilled in the middle of our winter {or sprinter as I liked to call it: spring + winter = sprinter} we just haven’t yet. I’m looking forward to fresh salads, fruity beverages, juicy burgers, and sweet, sweet, CORN! Oh my, I’m nearly drooling. Doesn’t that all sound amazing?
Lets marvel for a moment at how absolutely stunning this Fresh Sweet Corn Salad is. Just beautiful. The bright colored veggies make my heart skip a beat. What I love about the dressing is that it’s made without any refined sugars whatsoever. I’m learning from the hubs the health benefits of apple cider vinegar, and while the taste is still growing on me, it pairs nicely with these delish veggies. Serve this Fresh Sweet COrn Salad at your next picnc, BBQ, or potluck & wow the crowd!

- 1/2 c. raw apple cider vinegar
- 1/4 c. honey
- 1 tsp. kosher salt
- 1/2 tsp. coarsely ground black pepper
- 4 ears fresh organic non-gmo sweet corn
- 1/2 c. finely diced red onion, soaked in ice water for 20 minutes and patted dry
- 1/2 medium cucumber, seeded, peeled, then diced to same size of onions
- 1/4 medium red sweet bell pepper, diced to same size as onions
- 1/4 medium orange sweet bell pepper, diced to same size as onions
- 1/2 c. cherry tomatoes, halved
- 1 tablespoon fresh jalapeno, seeds and veins removed, very finely diced (optional)
- For dressing, in a glass bowl whisk together vinegar, honey, the 1 tsp. kosher salt, and black pepper until well incorporated. Let dressing stand while preparing salad. For salad, cut corn kernels from cobs. In a large bowl toss corn and remaining ingredients. Add the dressing. Serve over lettuce, with chips, or as a side dish.
